You can use a 720nm IR filter (if your camera has a shitty sensor that doesn't filter IR light) which makes them pink or white, or get your camera converted to shoot in IR. The wavelength you filter out determines what colors you get after you channel swap the Red and blue channels (to get the skies back to blue). You can even shoot film that captures IR.
Colors can be all sorts of things. Even with one that filters to pink or white, I've had them change colors based on time of day and the weather (like yellows or oranges).
