Get her mom/roommate on board and have them help you lay out a nice dress in her room with a note from you on that evening. Take her to dinner and the ballet. Bring her flowers or a small, handmade gift. Just sweep her off her feet and be uber romantic. :) Going to the ballet is just an idea, you could also go to a concert or see some other sort of show.
