As I said this is speculation, but in the current canon lightsaber crystals are somewhat intelligent, and chose their bearers. This is backed up by the lightsaber calling to her. Also all the images she sees might not be Lukes memories, as they are all events that the saber is present for aswell, and If I haven't completely proven myself a nerd, Jakku is supposed to be something of a Light side force nexus, imbuing Rey with power for much of her life, manifesting as it did with Anikin as quick reflexes and uncanny engineering and piloting abilities. So some might say shes a mary sue, but I want to think she is the result of some pretty good story lines converging.
