This picture is what I mean by "banding". If you maximize the picture, I'm sure you will see the uneven choppiness of the colors around certain areas. I basically want them smoothed out but without removing all the detail as you did in your first try. The "uneven gradient" becomes even more prevalent when I increase the saturation (which is what I want).
tl;dr Increased saturation with the blocky gradient removed
