You seem like a genuine guy. I won't lie, I'm a complete prick, so honestly isn't really the best tactic for me. But I think honestly is the best way for you go with this one. Firstly, because the truth is better than any lie you could make up and secondly because, by the sounds of it, it'll do you good as well.
Try not to jump the gun when she accepts you (she will). Just suggest you both meet and grab a drink or a bite to eat. Once you're in front of her and you've talked a bit you'll know whether there's something there still. If there is, then when you tell her how you feel (not everything all at once, spread it out over a couple of dates / days) you'll come across as more genuine etc.
The advise I can offer about being honest and so on is limited, I must admit. Hope things work out.
