Non Non Biyori, very relaxing show about life in the countryside. It's very relaxing, and all of its cast is enjoyable and memorable. The anime has completely caught up to the manga, so it's done.
Aria, another very very relaxing show set on Mars after it's been terraformed to support human life more or less, and follows the exploits of gondoliers in training as they tour people around Neo-Venezia.
Bartender, it's a pretty much completely episodic anime about a very talented bartender (The God of the Glass) more or less serving the right drink at the right time for the right person to coincide perfectly with the circumstances they're going through. Furthermore, the OST for the show has some of the best piano tracks in anime. If you do nothing else, please just listen to that. It's on YouTube right here.

Cowboy Bebop is the obvious candidate for show to watch when all else fails, because it's extremely difficult to dislike Cowboy Bebop. The presentation is very heartfelt, the OST is legendary, the characters are very memorable, and while the plot is mostly self-contained, it's got enough to tie everything that happens plot-wise to its central theme. Frankly if you watch through Cowboy Bebop and find that you dislike it, I would abandon hope for ever enjoying the medium until that changes.
Most importantly though, you seem to have this kind of abrasive and rigorous set of standards. From one anon to another, you would be wise to lessen your standards a bit. I'm not saying develop a strong affinity for ecchi, what I'm saying is when you have a hammer, everything looks like a nail. Give some stuff a chance.
