If you take nothing else away from this thread, take away this:
- you can add SMB3 (SAMBA) and NFS (NFSD) shares in Files, and copy stuff directly over your own wifi.

It also sounds like you're not backing up your phone at all, because you've not found a way to do it that you're comfortable with. Consider installing a W10 VM and iTunes, then you can get automatic wifi backups every night. You don't even need to pirate W10, it will complain that you've not paid for it, but it won't stop you using it.
