you should probably watch 1-26 without DC first since that's the TV version and it was how people first experienced evangelion, then rewatch it again, that would be the best thing to do, but if I'm being honest it's completely ok to just watch the director's cut episodes and EoE the first time and never bother with the TV ending
also watch death BEFORE you watch the end of evangelion, it's a recap but it does do some new things with the scenes
