For beginners good starts would include the original Zoids (and Wild), Gundam SEED and 00, the original Casshern (fuck Sins), every Braves series that isn't Goldran (which includes Betterman as a black sheep ninth entry), everything with Go Nagai's name since the genre owes him just about everything short of outright creation, Gun X Sword, Gravion, Godannar, VOTOMS, Ideon, Xabungle, Dunbine, Acrobunch, Braiger, Goshogun, Raijin-Oh, Ryu Knight, Granzort, Brave Raideen (it finally got fully subbed after 12 long years), Daikengo, Combattler V, Gunbuster and Diebster (same creators as Evangelion but each one is shorter), Big O, Orguss, Dai-Guard, RahXephon, Aldnoah.Zero, Nobunaga The Foo, Escalowne, and the Aquarion trilogy (Genesis, Evol, and Logos in that order).
Mecha has a wide variety of minutia and most of them have a hard focus on in-universe mechanics and creatures (which will include vehicles). If you want to learn more about the types of creatures and powers of various mechs the /m/ wikia is a solid resource although if you want to make edits a fandom account is required.
