"Others" is where mostly apps and associated app data go aka cache and necessary files for apps to work.
My guess is it keeps filling up because you have some apps keeping lots of cache, something like streaming apps(the Stremio kind), app downloads(sometimes whole movies count for cache). Think of what apps you use the most and check sleeping apps settings. Apps you don't use for a while should be put to sleep by the OS, if they aren't put them yourself.
