You might enjoy Legend of the Galactic Heroes. It's quite a tough show to get into since it's literally just people talking, but if you find it interesting it's worth it in the long run. It took me three attempts to get into it but I finally gave it another shot in 2022 and loved it. Ping pong the Animation was another good show I remember enjoying a bunch and I'd say it has a similar feeling to Joe.
I'd also say to look at other Dezaki directed works if you enjoy Joe. Rose of Versailles took me until episode 4 to really enjoy (and took me 3 weeks to watch 3 episodes) but a week later I watched the final 9 episodes in 1 day because it was just so good. Takarajima was another I remember adoring.
Manga wise, I personally loved Rookies when I read it which is about a teacher trying to get delinquents to rejoin the baseball team and tries his hardest to bring them all together. I adored it. Also, if you read Kaiji I imagine you've read other FKMT works like Strongest Man Kurosawa and Seizon Life?
The only other shows that I found to really enjoy and never found boring were Future Boy Conan, Touch, Hajime no Ippo, Lupin the Third Part V, and Irresponsible Captain Tylor. Although, some took a few episodes to really get me interested.
