Texhnolyze is relatively expiremental, if you want a real mindfuck try Nekojiru-sou. Kanashimi no Belladonna is a very popular avant-garde animated film I'd recommend.

Toradora is the greatest love story ever told, and legitimately probably at the top of romance anime. That being said, Hideaki Anno directed KareKano which is also exceptional, so if you like his style look into that. If you _really_ like his style I'd recommend running through Gainax. Their works are heavily self-referrential, so you could do Daicon IV (A true masterwork, made before the studio existed by amateurs, it's here)

Having seen TTGL and Eva that should pretty much satisfy the Gainax hits, again, if you want more just try the rest of the Gainax catalog. Gainax is essentially dead now, a significant portion of the company went on to form Trigger, who made Kill la Kill, Little Witch Academia, Brand New Animal, etc.
If you liked Violet Evergarden, Kyoto Animation is another standout studio, though they get meme'd on /a/ a lot. Hyouka is slow paced but exceptionally well done. Haruhi is a classic, the Dissappearance movie is one of the best animated films ever made, to everyone's surprise, but you need to watch the series first.
If you like older anime, Irresponsible Captain Tylor and Bubblegum Crisis are two solid picks.
If you want fun action, I'd highly recommend Punch Line, Rolling Girls, Flip Flappers (this has is a standout)
