Recommend some unconventional fantasy manga/anime. Stuff that's not just medieval europe/japanese folklore/jrpg shit and doesn't have all the common fantasy tropes.

18th-19th century tech level, sky civilization where legendary ancient dragon the size of an island, carrying entire city roam the skies. Dragons can propel themselves through the air but cannot truly fly, so humans domesticated them, giving them canvas wings reminiscent of WW1 planes. Flying dirigible galleons pulled by larger dragons duking it our in the skies, smaller dragons biplanes and triplanes dogfighting each others. Sky pirates with muskets, flintlock pistols, and cutlasses hitch ride on the dragons; deck-dropping on merchant vessels.

The Arms Peddler
Fantasy as in monsters and supernatural beings roam the land. The MC is a Witcher-esque monster slayer with arms-dealing as her day business. Set in Post-apocalyptic world where technology has regressed into medieval level meets Wild-West gun-armed society, where the guns are the surviving remnants of the old civilization's technology.

Koukoku no Shugosha
Mid 19th century tech level fantasy world, where Celestial Dragons looms over the planet, and neutral to the struggles of humans, as enshrined in the ancient Grand Covenant between them and humans. The story is set in a war between Fantasy!Meiji Japan and Fantasy!Tsarist Russia over Fantasy!Hokkaido, where Sabertooth tigers and their handlers are deployed as recons/pathfinder/rangers; Dragoons riding Pterosaurs; and Clairvoyants/Telepaths are employed as forward artillery observer and human radio. The MC is also rather unconventional.

Toujuushi Bestiarius
Fantasy Roman Empire, expanding and conquering realms, both of men and beasts. As per the title, the PoV characters are Bestiarii - gladiators who are pitted against beasts. But here, it wasn't lions or elephants, but mythological beasts; which outside of the arena often formed bond of brotherhood between men and beast in their shared yearning for freedom.

Since you posted made in abyss I am not sure if this will fit what you are looking for, but magical girls fit that idea. The magic system in thise kinds of shiws is very unique and seperated from both tolkein style fantasy and yokai. Monogatari may also fit what you are looking for.
After writing this I remembered an anime called somali and the forest spirit. It does have oni and golems but the world is very well thought out and unique and refreshing.

Since Moomin was brought up, Rojica to Rakkasei is similar on a surface level setting-wise. The manga itself is a mix of surreal cheerfulness with a dark streak.

Amagoi takes place in a weird, humid mushroom rainforest world.

To Your Eternity's setting is all over the place, given the long timespan it takes place over. Starts with not-Jomon Japan, and goes from there in a bit of a cultural mix.
