Hellsing Ultimate is pretty unique in the way it does wacky chibi stuff along side totally serious ultra-violence. Best you can hope for is super gory anime that take themselves so seriously they are unintentionally funny. Eflen Lied can be that way for some people, also Akame ga Kill though it's not nearly as bloody as it tries to be.

Higurashi got pretty gory at times during the death scenes.
When the killing scenes aren't happening, the cast is pretty chill.
