Can anyone recommend me an anime with really good characters that are explored/developed in a believable way? I think Vinland Saga broke me with the 180° turns

I thought Berserk, NGE, some Monogatari arcs, Rakugo S1 and certain arcs of Mob Psycho did this well if that helps
