Anime is highly subjective. Throw some thoughts out there on what you're looking for.
Here's my highly subjective anime bingo. Many of these I would consider classic. Many I wouldn't consider classic for a second. But they're all here for a reason.

Mushishi is the obvious choice. There's also something else that was in a similar vein that I can't remember the name of, but that one was a bit more arthouse-y.

Go watch Mob Psycho 100, its an easy watch, no convoluted story, its not too long.
It's funny with likeable characters and some of the best animation I've seen in an anime with a great soundtrack.
If you're in for a real grind you can watch Yu Yu Hakusho or Hunter x Hunter

If you’re into mecha I recommend patlabor and it’s movies, the shows a bit slow but enjoyable but the movies are god tier
