Evangelion is influential but the animation of the original TV series isn't always that great (run out of budget at some point). The Rebuild movies have fancier animation but kinda shitty plot.
Fate/Zero has pretty good animation and cool battles. You may also want to look into other Type-Moon and Ufotable stuff like Unlimited Blade Works, Heaven's Feel, and Kara no Kyoukai.
Bakemonogatari doesn't have great animation (looks like a PowerPoint presentation oftentimes) but it has become memorable and influential for the fanservice (recommended especially if you're a footfag). The manga of Bakemonogatari is also really amazing and you should read it (the artist is the same guy who did Tenjoh Tenge and Air Gear).
Mirai Nikki is great if you like crazy yandere girls.
As a wild card, watch Blood-C without reading any spoilers. It will be quite the experience.
