In order of my preference:
Battle Garegga: A moderately difficult game with some interesting, yet jank mechanics made by RAISING
Armed Police Batrider: Another RAISING game.
Ikaruga: A very mechanically interesting shmup.
Mushihimesama: A good introduction to CAVE shmup games.
(Do)DonPachi ____ : There are like tens of them, you will not lack for variety.

For getting involved with some shmup communities, I recommend https://shmups.system11.org/
They're pretty grognardy and dislike touhou, but within their niche they're really enthusiastic about what they enjoy, which are shmups of course.

word of caution from someone who got into the genre through touhou as well, be vary of the ones that are actual arcade games being designed to suck your money out and thus having a lot more of that "where the fuck do i stand" style bosses that can be trivialized with enough retries
