Majestic Prince is another great one, it's been years since I've seen this one but you've got the main cast with varied types of mecha so you've got some teamwork going on here.
Martian Successor Nadesico's a more realistic one and easily the most comedic of these.
Ryuuseki Gakusaver is another short OVA, it's not talked about too much but it's excellent and another more comedic one to a certain extent.
Betterman's a lot darker, both literally and in tone, than the rest of these but it's a neat show with a great OST.
Gundam's Gundam, you already know it exists. There are plenty of charts, Wikipedia has production order listed pretty nicely, and there are plenty of stand alone shows if you don't want to get your feet too wet. Lots of great designs, cool music, so if anything already has your interest I'd give it a look if it's not dependant on anything else or if not the original's still great.
Macross is another old one, although it has nowhere near as many shows and episodes as Gundam, lots of music in this one as that's kinda the focus. Series order for this one is easy enough to find a chart on google, I'd probably reccomend starting at the beginning for this one but if you're put off I'd say watch Do You Remember Love (a film retelling of the original series) or really whatever else as you're not really going to be confused by not having seen previous entries but later series do spoil bits and pieces of earlier series. Frontier's pretty popular as a starting point it seems.
