I recommend that if you are new to anime, you watch the older classic "top rated" shows first. They are made with cels that are manually moved or manually redrawn to provide motion. Today's anime has most of the content as 3D models that are then manipulated for movement. They are output in 2D format so you don't see the "ray tracing" style of output.
If you are already jaded, and say "I don't like how old anime looks", then so be it. Such viewpoints though are what separates anime fans from anime consumers. The vast majority of people aren't fans of anime; they are just consumers of anime.
