I watched anime like 10 years ago, then stopped, and now I'm getting back into it. I haven't watched much, but I think I know what I like.
My favorite anime of all time is Hyouka. There's just something about the art, animation, OST and extremely chill subject matter. It's nothing crazy like saving the world, stopping a primordial evil, or some crazy fantasy shit (although I can dig it sometimes); it's simply a story about an afterschool club that solves mysteries. But I don't think it was necessarily the subject matter: I think the #1 thing I liked about it was how realistic the dialogue was. I tried watching some other stuff and I didn't like it; the characters are all over emoting, doing those stupid Japanese "EHHHHH" and "OYYYYY" sounds, and people talk like they're in an anime. There's something about that I just don't like.
tfldr; please recommend me some Anime. I like: Hyouka, Monogatari, Samurai Champloo, Dusk Maiden of Amnesia, and Steins;Gate. My favorite part is the realistic/toned down dialogue
