how to gain that "feeling" for anime?
It's not that I don't enjoy anime, but when I got into it years ago everything was so exiting
I suppose its an effect of watching it for so long and knowing everything about it
Sometimes I get that feeling back, but that's rare

Accept the fact that 90% percent of art sucks, regardless of the medium. You've probably seen most of what's objectively great, and good/average ones that tickle your fancy. Unfortunately, you'll have to wait for the filter of time to see what holds up.

I think young people also are more inclined to be moved by media, probably in part because they're more carefree and don't have nearly as many obligations.

I already have other stuff that I do, but there just isn't anything as consistent like anime/manga, for me at least.I keep seeing people that took year long breaks and then they get back into it, but I don't really like the sound of it so yeah.

Start learning Japanese and get into VNs, manga and perhaps other related mediums; also go for live action movies at the least (not adaptations, but I guess those are cool if you're interested). Don't forget to enjoy stuff from other countries, as well. It's a probably good idea to have at least a bit of contact with content made for different demographics, like shoujo and josei as a male.

If you're not sure you want to commit to something, consider checking out reviews without spoilers to see if the thing is indeed for you. Don't binge watch and actually watch what you're watching. I see too many people around here that want to have stuff playing in the background while they do something else, and I've seen others playing anime at >1.00 playback speeds, too. I personally don't consider dropping not-currently-airing series to be a good idea. I'm not saying you should become picky and snobbish (don't watch dubs, though :^), but if you find yourself breezing through a great many series, especially because of the aforementioned problems, you should rethink your strategy.

It's also good to consider creating stuff. Not necessarily as a full time hobby, maybe it's just something you gave a few honest shots. For an anecdote, over a decade ago I was making shitty WoW PvP movies, and making them was enlightening for me, to say the least. I had times when I was laughing like a maniac for over 5 minutes because some things just clicked perfectly, or how well some crazy ideas worked. I definitely see media differently because of that experience and I had a ton of fun as well. Learning Japanese is also very invigorating on occasions.

All in all, you shouldn't forget that lolis need a lot of cake and hugs to survive.

Give Tabletop RPGs a try, I feel like it's one of those things that reignites child-like wonder, if you already have IRL or Online friends, try getting them into it, if you don't, there's plenty of Discords/Reddits out there to find games, the site Roll20 is a good start, there's also plenty of Youtube content to browse through to get a taste of what the genre is about.
I recommend starting with D&D 5th Edition simply because it's the most popular one and thus the easiest to find a group to play with, download the PDFs of the Rulebooks and read those fuckers, probably the slowest part but it's what separates TTRPGs from cop and robbers, you don't even need to know all the rules by heart, in case you make a mistake the Narrator will correct you anyway (he needs to know more than anybody) so it's half reading the rulebook and half just playing the fucking game.
Once you find a decent group of players with a decent Narrator you'll get into the zone, you'll be in for a fun rides that you'll never forget.
