I have only ever played Japanese games. But now I'm curious about western games since I'm completely out of Japanese games to play.
What are some ones I should check out, as a person coming from mainly a visual novel, retro JRPG and Touhou background.

Japanese games vs western games is a subject that fascinates me (I'm a reverse orientalist at this point)
First western gaming and personal computers have been really tied together for allof its history, western devs sparsely touched consoles until the 32 but era.
On the 80's you have a lot of different microcomputers, the ZXSpectrum and the Amstrad CPC, in europe, the Apple II and the IBM PC in america and the commodore 64 sold well on both sides. Exploring the libraries of these machines is exploring western vidya in general
From the top of my head Jet Set Willy was a british game that basically defined how western platformers play, today it's very crude and difficult to play but it has to be acknowledged.
I'm much more familiar with the IBM PC library and can easily rec you the King's Quest games from the top of my head, point and click adventures are the western equivalent of visual novels.
on the first half of the 90's you IBM PC basically conquered america and shared europe with the amiga, I don't know much from the amiga library but this era was the zenith of DOS/PC, first person shooters became the quintessential western genre with Doom, Duke Nukem 3d, Unreal, Quake, Unreal Tournament and half life being amazing milestone that you should play.
on this era plenty of other cool genres blossomed, lucasarts perfected the point and click adventure with The Secret of Monkey Island.
Plenty of cool strategy games like Populous, the original Age of Empires or Dungeon Keeper
I don't know where else to put this but Commander Keen is also good, it rivals console platformers of the era.
on the late 90's western devs started to touch consoles and stuff like Crash Bandicoot, Tony Hawk Pro Skater or Spyro The Dragon took the spotlight while PC god amazing stuff like Deus Ex, a cyberpunk RPG

from the 00's onward every console has a library with plenty of good western games, specially the original xbox while genre that mostly worked on PC got stuff like Age of Mythology and Rise of Nations
On the late 00's and early 10's I quit videogames and that era is still mostly darkness to me.
but from the mid 10's to the present western vidya is doing fine, I mostly play indies so suff like Blasphemous and Hollow Knight is stuff I can recommend personally.
I could go on about this topic if I had the energy and time to go through my notes and files. I could write a book on western vidya like those books Hardcore gaming 101 puts out but the labor for it is too much for me, vody a isn't even my main hobby.

Give the first two Fallout's a try and if you liked those, jump to NV. Might wanna check a "how do i play this" video for them since people do struggle understanding it these days.
