I'd recommend either MPC-HC or MPV, but both have their own learning curves, and while I wouldn't describe either as being difficult to learn how to use, if you want something that will work out of the box and play anything I'd recommend VLC in the short term.
Most anime is distributed as either MP4 or MKV file types. MKVs are the standard for most people, as they're better for handling multiple different subtitles and audio streams. However they don't play well with browsers or many media devices, hence the need for a dedicated media player. If you watch on a game console or smart TV, MP4 files are the way to go. You'll be more limited in options, but do what you gotta do.
