Since switching to linux my review font has stayed Chinese.
Can someone help me figure out how to fix this?

How can I change for japanese script in anki?

It works on my machine, I just created a new note type and tested it.
I don't think I have Kozuka Gothic Pro M though. But if you use Yu Mincho or Yu Gothic, those actually default to Japanese even without the language tag.

Does it display the right font for you anyway? I actually just installed this font to try it, and I couldn't get it to work with this syntax. I had to use:
><div style='font-family: "Kozuka Gothic Pro"; font-size: 20px;'>{{Front}}</div>
And it seems to work fine without the language tag too.

If you're on Arch, you can install these packages from the AUR for, afaik, the whole Windows font suite:
