Can someone explain this to me?
How do famines even happen when there should be an abundance of food??

I don't know a lot, but from the little I heard and some common sense, it is a really bad idea to forcefully restructure an entire society at gunpoint. Industry, transportation, all the infrastructures probably ended mismanaged or abandoned; I can recall Pot to be a nut about returning to village life without much technology or other "western corruption" (funny thing, I think he studied in the USA when young). I suppose there would have been many other factors, but returning to medieval-style agriculture, even employing 95% of the population, is madness, a simple drought can obliterate the production plan, and that means to starve.

Food doesn't grow itself, you have to grow it. Free market is one of the most effective ways to get stuff-people-want made by people-who-can-make-it, and central planning is one of the worst. So when you replace free market with central planning, you get famine, and if you're ideologically committed to central planning you get a long famine and everyone dies.

yea, farms make food but you have to physically move food to where the starving people were. not everyone went to the countryside. in this case, a shit ton of refugees fled to cities for safety. in the capital, the population more than tripled. meanwhile, khmer rouge troops patrolled the roads/river and stood in the way of supplies making it there, because they really hated the city slickers:

The rice was traded for weapons.
The hundreds of thousands of "new people" were class enemies too. Nobody wanted them to survive, especially when Angkar got more and more paranoid over the years.

Turns out when you don't properly maintain the industrial backbone of your truck-based transport logistics, you suddenly start needing millions and millions of oxens and horses which simply weren't there. The lack of cheap, mass-produces fertilizers from the chemical industry is an issue too. The fact that urbanites have little to no farming skills and political officers have little to no farm management skills doesn't make things any better.
