Watching what looks interesting to you personally will help you discover what you like and will give you the perfect setup to find obscurer shows.
Remember anime is just stuff that is animated and from Japan. It's very broad and people who claim to 'like' anime don't actually like the whole medium.
I tried watching the classics and I enjoyed it so little it gave me doubts as to whether or not I actually really liked anime and I kept worrying about having "shit taste" and that I wouldn't fit in.
Now I have found my particular way to consoom which is going by girls I find hot. On anidb I scour character tags and I always look at the character section of a show as one of the first things. This is also gradually awakening me to the world of seiyuu and now I also look at the girls voice actor to see if I recognise her and what other characters I know she has voiced.
I previously did not understand what attracted me to the medium, but I understand that it was always the cute and hot 2D girls that I seldom find outside of it.
