If I dual boot, can windows see what I'm doing on my other system also? Or is there a way to keep everything hidden from windows on the other drive?

Windows is spyware and I wouldn't doubt it can read the other drive, M$ has been trying to embrace-extinguish Linux for a while now.
Best thing you can do is not use Windows. Second best thing is encrypt the Linux partition.

You can mount the linux install, just not using the default software.
If you want it to be truly inaccessible, use encryption. But M$ isn't going to mount your drive to snoop or whatever schizo thing you are thinking. It's going to sit there being unreadable.

Not true, you don't need any additional software.
https://learn.microsoft.com/en-us/windows/wsl/wsl2-mount-disk

Biggest restriction with WSL is that it needs to lock the whole drive, not just the partition, so you will need some third-party solution if you want to mount a partition that's on the same drive as Windows is.
