first time using arch, can someone help a noob out?
where can I put my pictures and media?
how can I sort that media in different directories like documents, pictures and videos?
how do I install and use steam?
also i can't do anything without using root, any way to change that?

A first timer should not pick Arch. Try Linux Mint or Ubuntu.

Create a new user for yourself, don't use root.
# useradd -m -G wheel -s /bin/bash YourUserName
This will create a new user and /home folder, if in your new home folder you don't have Desktop, Documents, Music, etc. install "xdg-user-dirs", and then use the command $ xdg-user-dirs-update to create those directories. I haven't installed/used Steam on Linux in years so I can't really help you, but there should be plenty of guides online, you can also ask in the Friendly GNU/Linux thread on /g/ >>>/g/95210572. Install sudo if you haven't already, you'll need to add your new user to the /etc/sudoers file. In case you don't know, the "#" and "$" in the commands should not be typed, they indicate a command run as root (#) and a command run as a normal user ($).

You can just create those folders. Anyone can do it. As the other anon said you need to add a user account first, and then log in as that user. From there if you don't have the folders you can just create them yourself in your /Home folder.

you should really read a few things and watch a few tutorials before diving into Arch. its not noob-friendly and you'll get overwhelmed fast and maybe give up
dont store any important data on your linux drive because you'll be reinstalling soon and i bet you have no idea how to keep your home dir in-between fresh installations
