Have you played the Far Cry games? They're a little more combat oriented, but almost every mission allows you to use stealth, and there's a lot of neat animations, weapons, and tools you can use.
I think it started to go downhill with 5 and 6 was just utter Ubisoft bullshit. But 3 and 4 are both fun, pretty games where you can run around stabbing lots of people and shooting them with silent weapons and blowing them up. Plus they're probably only about $15 bucks nowadays.
