If you finish it and want more, then watching the 0079 TV show, and then the Char's Counterattack movie which looks fabulous. Chronologically there are two shoes in between 0079 and CCA, but they are not as good as 0079 and aren't required to enjoy CCA. Then lastly there is the F91 movie which also looks great. And after all that, there is the 08th MS Team OVA series which looks good but isn't as great story wise. And then everything else Gundam after that is a steep decline aesthetics and/or story and you should move on from the franchise to look at the other sights of the genre.

Neon Genesis Evangelion with the original English dub, not the nu Netflix redub which butchers the script. Once you finish the show, then you watch the End of Evangelion movie. And then you're done. Don't watch the Rebuild shit.
The Vision of Escaflowne TV show with the Funimation dub. It's Final Fantasy but with mechas. Once you finish the show, you can watch the movie for its aesthetic value.
The Iron Giant. Is an American animated movie and not anime but it's adjacent and the last act is very good, you should watch it if you haven't already.
Those are the classic, highest value recommendations. After you finish those, you can either start looking at OVAs like Gunbuster, Metal Gear Madox, Megazone 23 parts 1 and 2, etc. Or you're looking at longer shows like Dragonar, Full Metal Panic, Code Geass, etc.
