Dark Souls series, Fable.

However I don't like the western art style of Fable. However I have to recommend it since most people have played Dark Souls.

bit of a stretch, its about as detached from zelda as dark souls is, but I suggest the 3D Seiken Densetsu games (Trials of Mana, namely,) made by Square Enix, and it's pretty fun. it's got multiple endings, too

Other than being an actual RPG game it has boss fights, medieval styled weapons (sword and shield combat), weapon and armor upgrades and magic attacks. Its more similar than the other suggestions.
