Anyone know where I can watch full playbacks for specific events/matches for the games?

Last time I think I watched on the official site but I`m not seeing any options for watching playbacks this time.

It depends entirely where you are since that is up to the broadcasters.
The Games themselves and the IOC as organisations are not direct broadcasters. The IOC gets the rights to the footage after a while, or purchases it back once the Games are over.
AFAIK the only free broadcaster is France Television in France only and they keep the playback available for a bit, but you might b able to trick its web platform with a VPN or proxy.
