Are there any RPGs on the PS1 with a similar arstyle to quest 64, ape escape and megaman legends? I fucking love this more simplistic/childish artstyle since it doesn't seem to age like shit conpared to games that look more serious

None that I remember. Typically most RPG games for the PS1 had pre-rendered backgrounds.

The SNES has Super Mario RPG which also has a Switch remake if you want actual 3D graphics.

I think that anon is being sarcastic, granstream saga is notoriously shit
Final fantasy 3 on the DS/PSP is probably what you're looking for artstyle wise, although it is top down
