Is there any site/way to watch deleted youtube stuff?
I have a lot of deleted videos over my liked ones and I wish I could download them

The Internet Archive has some (not all) YouTube videos.
I've had some luck with it before, even with some obscure videos.
Unfortunately, they've been hacked recently, and they're offline right now.

Every url I try that have several snapshots I get "We have not been able to archive the video associated with this YouTube page."
Is this normal or I'm doing something wrong?

It is normal. It sucks. Whether you get a hit on a video is completely up to luck.

Yes. It either saves or doesn't save the video.
I haven't been able to figure out what causes it to fail. I know there were private videos I weren't able to archive with it.

Yes, exactly. It does save the video sometimes. You can even download it with yt-dlp by providing the wayback link to it if it is available.

It is worth checking, I think I encountered cases where some snapshots had broken video but others were fine. But I also had cases where all of them were broken. Don't get your hopes up, that's the basis of the game.
