My ex recently broke up with me (week ago), she's a short pretty shy girl.

How long should I wait and what should I say if I was to message her again? It's eating me up inside and can no longer find joy in things I used to. I don't think she'll find another guy for a while as she's quite awkward and self-conscious but she is quite close with her family (she broke up with me after talking to her dad)

Since she broke up with you after talking to her dad, the possibilities are:
A) she brought up reservations about your relationship to her family and they encouraged her to break up with you
B) her family doesn't like you and convinced her to break up with you
There are others, but generally speaking, it's probably something like that. You may be able to salvage a friendship from it, but getting back together is neither likely nor a good idea. Come to grips with that before doing anything else.
How long you should wait to message her depends on her personality and how sensitive she is to burned bridges. If you ever choose to, understand that you must not let grief or anger cloud your vision. Fully accept that what's done is done and build yourself up again; only once you've done that should you message her again. Approach her like a friend: check in on how she's doing, ask what she's been up to, maybe reassure her that you won't try anything funny and that you want to reconnect because you value her company as a friend if she's the wary type. Back off if she asks you to leave her be or shows signs of discomfort. That's all you can really do.
That said, it's for the best if you focus on yourself first. Don't dwell on if she's with some other guy (hint: it doesn't matter, either answer will feel like shit regardless), don't try to think of ways to get her back, just continue living as you always have and process your feelings as you go along. You need to cowboy up and cut off contact. Youre heart broken and are torturing yourself and making it worse by texting and talking to her again. You need to just get through this heart break and spend time with your family and friends instead.

The shitty part is that there isnt really any way around this. You are going to feel emotional pain and its going to suck really bad and theres not much you can do other than just take it. BUT, the good news is that it will end. It might not seem like it, but you will get over it and you will even eventually get to the point where you laugh at yourself for even being that broken hearted over her. Everyones gone through this exact thing and your not the first or last.

Go to the gym.

Either way it seems like a dick move on her part to brake off with you because the parents didn't approve the relationship. Imagine doing the same to her if your parents didn't approve your relationship with her.

Shes probably the type that's easily persuaded into doing things.

What do you even like about her that you would be determined to get back with her?

Don't message her ever again. Well, not if it's with the intention of asking her out again. Absolutely refrain from doing that. Focus on something else, and you'll find another girl eventually.
