These speakers have a USB-C for digital audio but I have a internal soundcard (which is better then the onboard audio) with only 3.5 Mic jacks and 1 Toslink port, is it possible to use a USB-C to Toslink cable and get audio?

Well if it's digital input then your onboard audio chip won't matter will it? Adam audio's computer driver will send the pcm data via usb and the speaker will have it's own DAC/amp chip.

It's stated on their site it would come up as an audio device if the USB-C port is used, this won't interfere with anything if I'd use it like I described in the OP?

You generally want to keep things digital before the amplifier and since these are powered speakers (with an internal amp) it makes sense to use digital input
