When I connect to a website that uses cloudflare (e.g. this one), how much data does cloudflare know? I read (https://web.archive.org/web/20230311151811/https://gitea.slowb.ro/dCF/deCloudflare/src/branch/master/readme/en.md) that it intercepts literally everything, thus has access to specific sites and all text I might enter onto a site (so stuff like unencrypted passwords and logins too). Is that true?
I know https (in theory) means that only the domain name is visible to isp/vpns/whatnot, the specific site and other stuff is encrypted, but with the "man in the middle" in the form of cloudflare how much of that encryption goes out the window?
