Trigun will feel like a natural followup to stuff like Cowboy Bebop and Outlaw Star. The anime drags a bit in the middle imo but it's got a solid core cast of characters. The protagonist, Vash, is a wandering outlaw on a desert planet with a ridiculously huge bounty on his head, but acts like a harmless idiot most of the time, belying his preternatural gun-slinging skills.
Ghost in the Shell is THE cyberpunk manga, and its various anime adaptations all have their own take on the setting, characters, and story. For that reason there is no recommend watching order since they don't really tie into one another at all, each can be viewed (appropriately enough) as a stand alone series.
