I enjoyed a majority of these, and I also enjoyed Metal Gear Solid 3 immensely. It doesn't click with everyone and some find it boring or not their cup of tea, but if you haven't at least tried it yet, I recommend any version you can get your hands on. The "remake" just came out and it's a one-to-one remake, meaning they just upped the graphics and added some QOL features, so maybe start there if you don't feel like trying an old PS2 game.
But the PS2 version is still solid. Try Subsistence (not Snake Eater) if you want the 3D camera, as the original Snake Eater version comes with only a top-down fixed camera.
