what can i do with an older mac mini? what can you do with it that would be of use instead of a second pc with mac on it.

How old are you talking about? I am typing out this post on a late 2014 Mac mini, and it's working just fine.

I figure if you had the remote control, you could turn it into an AppleTV/Home Theater PC.

Like the other anon said, use it as a media server. You could also use it as a local AI inference server/homelab. You could also donate its processing power/internet bandwidth to some project (e.g. archival).
