Anime like Spice and Wolf?

I especially enjoyed the light-hearted atmosphere, and how witty the main characters Holo / Lawrence were. The medieval setting was a plus.

not sure about medieval but try planetes, genshiken, honey to clover, the tatami galaxy, arakawa under the bridge, haruhi and GTO.

For anime with similar themes and enjoyment, I can recommend Maoyuu, Log Horizon, and Classroom Crisis (though this is sci-fi). There really is nothing quite like Spice and Wolf.

If you're up for trying out a visual novel, check out World End Economica, its by the same author.
