How can I make a spreadsheet/text document/whatever of all the files and their subfolders of a folder?
Also should mention I don't have access to Microsoft Office, only Libreoffice.

use an application like YourDir, Filelist Creator, Karen's Directory Printer, Filelister, Directory Report, etc

Open command prompt. cd to the directory and run this:

tree /A > file.txt

Then open file.txt.
