How to watch Evangelion:
Watch Episode 1-26 (No Director's Cut, No End of Evangelion)
Watch Episode 1-20 again, then watch Episode 21-24 in their director's cut versions. After that, skip 25&26 and watch "The End of Evangelion", it's a movie that is an "alternate" ending (more like definitive ending, this is the true ending)
one could argue you should do it in the reverse order, since director's cut is considered objectively better and The End of Evangelion is the proper ending
If you're going to watch the dub, that's fine, but you're going to have to give it a run watching it subbed as well after
If you enjoyed it enough, the manga is pretty good too, has some changes (some are questionable), most people didn't read it but it's pretty good and has some great scenes, and plenty of pages that include information about evangelion and essays from staff. those will strengthen your understanding of evangelion a lot
And then there are the Rebuilds of Evangelion. It's a reboot of Evangelion, with many changes, including new characters and different events. currently there are three movies out, with the fourth one planned for 2020
to understand the ending you wanna make sure you get a proper translation, you also do want best quality
