You watch the original series then the three movies. The first two movies are recaps with extra added scenes so you don't really need to watch it but the third and last movie, Rebellion, is the continuation of the original series and you should watch it.

Madoka has a lot of spinoff manga if you want to give them a try but I never read them to be honest.
There's also a wiki with more extra info about the series and all the discussion /a/ had about it when the anime was airing, runes deciphering, theories etc but only check it after you finish watching everything since it's full of spoilers.
