It depends on the way you use them:
Most music is recorded in stereo, so switching to surround will most likely only manage to make it sound weird.
This option would make sense for movies and games, giving you a more immersive experience.

Well, my dilemma came from having multiple audio tracks to choose for a movie, yes. The thing is, I don't think my headphones support surround sound (unless all stereo headphones do? I'm totally green about sound stuff, but I think the store clerk said I'd need better ones for surround), so I was wondering if switching to the stereo track would yield better results, because it doesn't need to 'downscale' it or anything like that. Hope that makes sense.

Surround, the movie is being downmixed on the fly by your computer.

If you have the choice, you should always select stereo.

There is software to enable “surround sound” even in stereo headphones and even stereo speakers. These are simulations to trick your ears, I honestly think it means nothing and unless you pay close attention to it, you really won't give a shit.
If I were you, I'd only care about this kind of stuff if I had a 5.1 speaker system, but do give it a try, man.
