I want to play as a necromancer who uses the undead as free labor to run a business of some kind. Probably some kind of dumb labor operation. Any games that have you do this?

thats probably too specific for a game.
But there are games that use the undead I guess.
google for games with undead minions.
but most likely wont be necromancers or summoning.
I know I played one but it was a really long time ago. If I remember Ill come back, but it wasnt that great

in Dungeon Keeper 1 and 2 you can capture heroes, starve them to death in prison, turn them into skeletons and make them work building traps in your workshop. that's about as close as i can get.
