What are some Animes with Christian symbolism and messages? And I mean more than just lol here is a cross and some latin chants.

Except it doesn't. There's nothing specifically Christian about it. You could replace God with Allah, Buddha, or Kali and the story would still be exactly the same.

What do you define as Christian anime? does it need to have the Church or Jesus in it? Anime isn't going to have much since Japan has almost no Christians.

OP, there are a couple:

Haibane Renmei - the idea of purgatory was a big influence here
Trigun - there are some Christian themes mixed in here and the mangaka is a Christian if I recall correctly
Yume Kakeru Kougen: Kiyosato no Chichi Paul Rusch - this is an anime about a Christian missionary who set up an orphanage in Japan after the war

But really if you want Japanese works that intersect with Christianity, don't waste your time watching anime, go read Shusaku Endo's books instead, starting with the novel Silence.

DxD, Index and hellsing. The most you'd get from anime in terms of christian symbolism is they try to incorporate them on their stories. otaku thinks christian mythology is cool and view it in the same light as how chuuni dark flame master sealed dragon within hand kind of thing.

Kids on the Slope. One of the main characters is a devout Roman Catholic. Though, you are better off reading the manga for the story. Watch the anime if you want to see how good they animated the jazz music scenes

If you don't have any hangups about reincarnation.... Acrobunch. It won't seem like it at first, but watch it to the end, the last episode does wrap a lot of it up. Hell there's even an episode where God causes volcanic eruptions around everyone for disturbing Noah's Ark. It's very out there.
