A lot of Umezu Kazuo stuff fits your bonus criteria. His style doesn't really lend itself to anime. The major ones I would recommend are The Drifting Classroom, My Name is Shingo, and Fourteen, but others like Cat-Eyed Boy, Fear, God's Left Hand, Devil's Right Hand are also excellent. Also, although the official release of Cat-Eyed Boy is technically 2 volumes and thus didn't fit your requirements, they're massively large volumes, so in terms of page count, it easily fulfills your requirements.

Currently reading Homunculus because it was in this recommended chart (bottom half). It's 15 vols long, finished serialization and doesn't have an anime.

Does the Perfect Edition have a much better translation than the original Viz release or something? It struck me as odd that they re-released it as an omnibus when their old translation was both suitable and already digitally available.
