The only ones that come to my mind are some "rare" ones like
Goblin (Italian horrorprog for Dario Argento movies)
Comus (britbong folkprog? weird cool shit anyway)
Ñu (spanish folk rock)

But Im not all sure, some of those maybe used violin in a couple albums

Absolutely, Gentle Giant is pretty much the gold standard for violin in a rock band. Their first three are their best albums.

Premiata Forneria Marconi also has a violinist and they're really good, so long as you don't mind Italian lyrics.
